Gluten Free Cranberry shortbread

These are sooo yummy and super crumbly.

I love shortbread because it has no eggs for Miss C and very low in sugar for, well everyone!



This is a gluten free cookie from Small Plates and Sweet Treats, one of my all time favourite books. Aran Goyoaga is just amazing at writing recipes and then conveying them to the public so beautifully through her book and also her website, cannelle et vanille, which is as much about the photography as the food.

I have literally bookmarked 20 of the recipes to try, she has written the book with a section for each season and then separated the savoury and sweet dishes for each season. It is so easy to navigate when you are trying to find something to cook on tummy desire (as Erin says!) There are also a lot of chocolate recipes in there to try. Nice.

This shortbread recipe is copyrighted, so I can’t share with you, but if you do happen to have the book, or will be doing yourself a favour and buying one, you will find it under pistachio and vanilla bean shortbread cookies. I omitted the nuts as Miss A is allergic and I’ll be halving the sugar next time, or even a bit less than that. The girls loved it though…

I think that most shortbread recipes out there can be made sugar friendly – you just halve it for a start, and use rapadura instead of processed castor sugar or icing sugar. I’ve not scared of butter so bring it I say!



Also wanted to share these, Mum and Dad bought me some flowers up from their amazing rose garden for my birthday last week – aren’t they lovely?
