Garden success and Creamy Broccoli soup

See here, see here, I have produce galore!

Here are the happy gardeners with their pick. 5 broccoli’s, 1 cabbage, 1 cauliflower, 10 or so beetroot. We also had oodles of spinach and bok choy ready to go.

I’m going to roast these beauties up tonight for dinner.

Now you know I love my soup, so 1 and a half of those 5 broccoli’s went into this delicious creamy broccoli soup for lunch today.

The recipe is a simple one:

1-2 garlic

.5kg – 1kg of broccoli

equal amount of chicken or vegetable stock

a generous pour of cream

Fry the garlic in a little olive oil, or butter, or both. Add a few broccoli stalks as you’re going.

Add as much broccoli as you can fit in your pot. I could only get about 700gm in mine, so then added equal amount of stock.

Simmer for 10 minutes.

Let it cool and then blend with about 1/3 cup of cream and salt and pepper.

Serve hot, with cheese toast!

(I wont tell you how good it is for you in case you don’t try this super easy soup, but broccoli is awesomely for you!)

Happy Customers.
