Chicken Noodle Soup time


Ooh one of the best things about winter is soup. Just like salad is a must in summer, soup is so satisfying and warming for your soul when it gets cold.




This chicken noodle vegetable soup was my first one for the season and was delicious! I highly recommend adding noodles or rice to your soups to thicken them and fill you up.

1 onion
1 garlic
1/2 chilli
2 cups of chopped veges
1 cup noodles or rice
1-2 chicken breasts (I shredded the left overs from a roast)
herbs if you have them
Chicken stock, around 4 cups

It’s a pretty simple recipe. Just use what you have. I would have liked ginger, but had none. I love all those Asian greens which would have worked really well too.

Just fry off the onion, garlic and chilli then add stock and noodles and simmer for 10mins, throw in veges with about 5 mins to go. If you are using raw chicken add when you put in the noodles and simmer for about 15 mins, if using cooked chicken just put in at the same time as the veges.
